This is a simple and delicious warm weather meal. Served alone or along side, rice, bread or fresh steamed veggies to bolster the wraps.
Directions
In in small bowl mix the cornstarch with 3 T. of water.
Heat the oil in a wok or 2- inch skillet over medium-high heat. Add the green onions, ginger and garlic and stir-fry until softened., 1-2 minutes. Add the chicken and stir-fry breaking it up into small pieces until fully cooked.
Add the water chestnuts, grated carrots, cilantro, sugar, soy sauce and Sriracha. Give the cornstarch a quick stir and add to the pan as well.
To serve, place about 1/4 cup of filling in each lettuce piece, sprinkle with chopped peanuts, drizzle with sesame oil and more cilantro if desired.

1 T. Cornstarch
2 T. peanut or vegetable oil
6 green onions trimmed and thinly sliced
1 and1/2 T. fresh grated ginger
1 T. chopped garlic
1 lb. of ground chicken
1/2 cup sliced water chestnuts
2 T. brown sugar
2 T. soy sauce
1 t. or to taste Sriracha
sesame oil to taste
grated carrots to taste
chopped peanuts
8 pieces of whole, tender bibb lettuce
